Ingredients
  

For the Chicken:
  • 1 pound Chicken Breasts ideally four small breasts
  • ½ cup White Whole-Wheat Flour or gluten-free flour
  • 1 cup Italian Seasoned Bread Crumbs gluten-free options if needed
  • ½ cup Italian Seasoned Panko gluten-free options if needed
  • 1 tablespoon Italian Seasoning blend of herbs
  • 1 teaspoon Salt to taste
  • 1 cup Parmesan Cheese grated and divided
  • 2 large Eggs whisked
  • 1 cup Marinara Sauce good quality, store-bought or homemade
  • 1 cup Mozzarella Cheese grated
  • ¼ cup Sliced Basil for garnish

Equipment

  • Air Fryer
  • Meat mallet
  • Shallow bowls
  • Cooking spray
  • Spatula
  • Thermometer

Method
 

Instructions:
  1. Start by flattening the chicken breasts to about ½ inch thick using a meat mallet.
  2. In one shallow bowl, place the white whole-wheat flour. In another bowl, whisk the eggs until combined. In a third bowl, mix the breadcrumbs, panko, Italian seasoning, salt, and ½ cup of grated Parmesan cheese.
  3. Coat each chicken breast in flour, dip in egg, and press into the breadcrumb mixture.
  4. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  5. Spray the air fryer basket with cooking spray and place the chicken in a single layer. Cook for 10-12 minutes, flipping halfway through.
  6. Remove the chicken, spoon marinara sauce over each piece, and sprinkle with remaining Parmesan and mozzarella cheese.
  7. Return the chicken to the air fryer and cook for an additional 3-5 minutes until the cheese is melted.
  8. Let it rest for a minute and garnish with fresh sliced basil before serving.

Notes

  • Do not overcrowd the air fryer for best results.
  • Double-dip for a thicker crust.
  • Marinate chicken for extra flavor if desired.
  • Let the chicken rest to retain juices.
