Instructions:
- Start by flattening the chicken breasts to about ½ inch thick using a meat mallet.
- In one shallow bowl, place the white whole-wheat flour. In another bowl, whisk the eggs until combined. In a third bowl, mix the breadcrumbs, panko, Italian seasoning, salt, and ½ cup of grated Parmesan cheese.
- Coat each chicken breast in flour, dip in egg, and press into the breadcrumb mixture.
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Spray the air fryer basket with cooking spray and place the chicken in a single layer. Cook for 10-12 minutes, flipping halfway through.
- Remove the chicken, spoon marinara sauce over each piece, and sprinkle with remaining Parmesan and mozzarella cheese.
- Return the chicken to the air fryer and cook for an additional 3-5 minutes until the cheese is melted.
- Let it rest for a minute and garnish with fresh sliced basil before serving.
