Ingredients
  

  • 1/2 cup butter (softened)
  • 10 tablespoons Monkfruit Sweetener
  • 1/4 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 3 tablespoons flaxseed meal
  • 2 1/2 cups almond flour

Method
 

  1. Start by preheating your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened butter and Monkfruit sweetener. Cream them together until light and fluffy.
  3. Add in the kosher salt, vanilla extract, and flaxseed meal. Mix until fully incorporated.
  4. Gradually add the almond flour to the wet mixture, stirring until a soft dough forms.
  5. Portion out the dough and roll it into balls. Place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Remove from the oven and allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack.

  • Store in an airtight container at room temperature for up to one week.
  • For longer storage, freeze cookies in a single layer for up to three months.
  • Allow cookies to cool properly before transferring to maintain their shape.
