  • ½ cup heavy whipping cream (for ganache)

  • Parchment paper
  • Spatula

Method

Cooking Baileys Brownies: The Process
  1. Step 1: Prepare the Brownie Batter: Preheat your oven according to the instructions on the brownie mix box. Grease your 9x13 inch baking pan or line it with parchment paper for easy removal. In a large mixing bowl, combine the brownie mix with the required ingredients: eggs, oil, and water. Stir until just combined, then fold in the semi-sweet chocolate chips for an extra chocolatey kick.
  2. Step 2: Bake the Brownies: Pour the brownie batter into the prepared baking pan and spread it evenly. Bake according to the package instructions, typically around 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Once baked, allow the brownies to cool completely in the pan on a wire rack.
  3. Step 3: Make the Baileys Frosting: While the brownies are cooling, prepare the frosting. In a mixing bowl, beat the softened salted butter until creamy. Gradually add the sifted powdered sugar, mixing on low speed until combined. Add the vanilla extract, Baileys Irish Cream, and heavy whipping cream, and continue to beat until light and fluffy.
  4. Step 4: Frost the Brownies: Once the brownies are completely cool, spread the Baileys frosting evenly over the top using a spatula. This creamy layer is what makes these brownies irresistible.
  5. Step 5: Prepare the Ganache: To create a decadent ganache, heat the ½ cup of heavy whipping cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and stir in the 2 tbsp of Baileys Irish Cream. Add chocolate chips and let them sit for a minute before stirring until smooth and glossy.
  6. Step 6: Drizzle the Ganache: Drizzle the ganache over the frosted brownies, allowing it to drip down the sides for a beautiful presentation. Let the ganache set for at least 30 minutes before slicing the brownies into squares.

Notes

  • For an extra chocolatey flavor, add more chocolate chips to the brownie mix.
  • These brownies can be made ahead and stored for up to a week in an airtight container.
