Ingredients
  

  • 1 lb boneless, skinless chicken breast cut into bite-sized pieces
  • 1 tbsp potato flakes
  • 1/3 cup cold water
  • 1 tsp garlic salt or 1/2 tsp garlic powder + 1/2 tsp salt
  • 1/8 tsp black pepper
  • 2 1/2 cups corn flakes cereal crushed
  • 1/4 cup Parmesan cheese finely grated

  • Mixing bowls
  • Measuring cups and spoons
  • Food processor or plastic bag

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the cold water and potato flakes until you achieve a smooth paste. Add the garlic salt and black pepper, stirring until well combined.
  3. Dip chicken pieces into the potato mixture, ensuring each piece is coated evenly.
  4. Pulse the corn flakes in a food processor until finely crushed, or crush them in a plastic bag with a rolling pin.
  5. In another mixing bowl, combine the crushed corn flakes and finely grated Parmesan cheese.
  6. Roll each piece of coated chicken in the corn flakes and Parmesan mixture.
  7. Line your baking sheet with parchment paper and place the coated chicken nuggets on it, spaced evenly apart.
  8. Bake for about 15-20 minutes, or until the chicken is cooked through and the coating is golden brown.
  9. Let the nuggets cool for a few minutes before serving with your favorite dipping sauces.

Notes

  • For a lower-carb option, substitute corn flakes with almond flour.
  • Store cooked nuggets in an airtight container in the fridge for up to 3 days.
  • Freeze leftovers for up to 3 months and reheat in the oven.
