Ingredients
  

  • 1 large egg Acts as a binding agent
  • ¾ cup granulated sugar Adds sweetness and texture
  • 6 ounces Greek yogurt 0% fat Fage; sour cream may be substituted
  • ¼ cup canola or vegetable oil Keeps the donuts moist
  • 1 tablespoon lemon zest Infuses donuts with lemon flavor
  • 1 tablespoon lemon extract Enhances lemon flavor
  • A few drops yellow food coloring (optional) for color
  • 1 ½ cups all-purpose flour Base of the donuts
  • 1 teaspoon baking powder Helps the donuts rise
  • ½ teaspoon baking soda Works with yogurt for fluffiness
  • ½ teaspoon salt Balances sweetness
  • 1 cup confectioners sugar For the glaze
  • 3 tablespoons lemon juice Adjusts glaze consistency

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease your donut pan with cooking spray or use a silicone donut pan.
  3. In a large mixing bowl, whisk together the egg and granulated sugar until well combined. Add Greek yogurt, canola oil, lemon zest, and lemon extract; mix until smooth.
  4. In another bowl, whisk together all-purpose flour, baking powder, baking soda, and salt until no lumps remain.
  5. Gently fold the dry ingredients into the wet mixture until no dry flour is visible.
  6. Spoon the batter into the prepared donut pan, filling each cavity about ⅔ full.
  7. Bake for 10-12 minutes, or until golden and a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a cooling rack.
  9. In a small bowl, whisk together confectioners sugar and lemon juice until smooth.
  10. Dip the tops of cooled donuts into the lemon glaze and allow excess to drip off.

Notes

  • Store unglazed donuts in an airtight container for up to 2 days.
