  • 1 cup panko bread crumbs
  • ½ cup grated Parmesan cheese
  • ½ cup fresh parsley minced
  • 3 tablespoons fresh chives minced (or dill for a different flavor)
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme minced (leaves only)
  • 1 lemon zested
  • 6 tablespoons salted butter melted and divided
  • 1 tablespoon fresh lemon juice freshly squeezed
  • Lemon slices or wedges for garnish
  • Fresh parsley for garnish

Method
 

Directions:
  1. Preheat your oven to 400°F (200°C). This high temperature will give the crust a beautiful golden color and keep the salmon moist.
  2. Line a baking sheet with parchment paper for easy cleanup. This step is essential to prevent the salmon from sticking and make serving a breeze.
  3. In a large mixing bowl, combine the panko bread crumbs, grated Parmesan cheese, minced parsley, chives, garlic, thyme, and lemon zest. Stir until well mixed.
  4. Place the salmon fillets skin-side down on the prepared baking sheet. Drizzle 4 tablespoons of melted butter over each fillet, making sure they are evenly coated.
  5. Spoon the herb and cheese mixture generously over each fillet, pressing down lightly to ensure it adheres.
  6. Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The crust should be golden and crispy.
