Ingredients
  

  • 1 pound Sweet potatoes firm and free from blemishes
  • 2 tablespoons Olive oil
  • 1 tablespoon Cornstarch
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash the sweet potatoes and peel if desired. Cut them into uniform fry shapes, about 1/4 inch thick.
  3. In a mixing bowl, combine the sweet potatoes with olive oil, cornstarch, kosher salt, and black pepper. Toss until evenly coated.
  4. Line a baking sheet with parchment paper and spread the fries in a single layer.
  5. Bake for 20-25 minutes, flipping halfway through.
  6. Check for doneness; fries should be golden brown and crispy. Bake longer if necessary.
  7. Let cool for a few minutes and serve with your favorite dipping sauce.

  • Try different seasonings for variety, like cinnamon in fall or garlic powder in summer.
  • Store leftover fries in an airtight container in the fridge for up to 3 days.
  • For crispy reheating, warm fries on a baking sheet at 400°F (200°C) for about 10 minutes.
