Ingredients

  • 4 slices banana bread (2.5 cm, at least 1 inch in thickness)
  • 2 large eggs
  • 1 cup heavy cream
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • Icing sugar (for dusting over French toast)
  • 2 large bananas (sliced)
  • 1 tablespoon brown sugar (packed)

Equipment

  • Frying pan or griddle
  • Mixing bowl
  • Spatula
  • Measuring cups and spoons
  • Serving plates

Method

  1. In a mixing bowl, whisk together the eggs, heavy cream, honey, and salt until the mixture is well combined and frothy.
  2. Take each slice of banana bread and dip it into the custard mixture, ensuring both sides are thoroughly coated.
  3. In a frying pan or griddle, melt 2 tablespoons of unsalted butter over medium heat.
  4. Place the soaked banana bread slices in the pan, cooking for about 3-4 minutes on each side until golden brown and crispy.
  5. In a separate pan, melt 2 tablespoons of unsalted butter over medium heat, add the sliced bananas and sprinkle with brown sugar. Sauté until tender and caramelized.
  6. Plate the French toast and top with the caramelized bananas. Dust with icing sugar and serve warm.

Notes

  • Use gluten-free banana bread for a gluten-free version.
  • For a dairy-free option, substitute heavy cream with coconut cream.
  • Experiment with spices like cinnamon in the custard for extra flavor.
  • Consider topping the dish with chopped nuts for added texture.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
