Ingredients
  

  • 1 piece egg beaten
  • 3 tablespoons pickle juice
  • 2 pounds boneless chicken tenders cut into bite-size pieces
  • 1 1/4 cups cornflake crumbs
  • 3/4 cup Panko
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/4-1/2 teaspoon cayenne pepper optional
  • Kosher salt to taste
  • extra virgin olive oil for brushing
For the Sauces:
  • 1/4 cup avocado oil mayo
  • 1/4 cup Dijon mustard
  • 3 tablespoons honey
  • 2 teaspoons pickle juice or lemon juice
  • cayenne pepper to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup grated Parmesan
  • 1 clove garlic grated
  • 1/4 cup sweet Thai chili sauce
  • 2 tablespoons ketchup
  • 1 piece lime zest and juice
  • 1/2 cup ranch dressing
  • 1/4 cup BBQ sauce
  • 1/4 cup hot sauce
  • 3 tablespoons melted butter or olive oil
  • 1 teaspoon seasoned salt
  • black pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C). This ensures that your nuggets bake evenly and become perfectly crispy.
  2. In a large mixing bowl, combine the beaten egg and pickle juice. Add the bite-sized pieces of chicken tenders and ensure they are well coated. Let them marinate for about 15 minutes to soak in the flavors.
  3. In another bowl, mix together the cornflake crumbs, Panko, garlic powder, onion powder, paprika, cayenne pepper, and kosher salt. This mixture will create that irresistible crunch.
  4. Once the chicken has marinated, take each piece and coat it thoroughly in the crumb mixture. Press down gently to ensure the coating sticks well. Place the coated chicken nuggets on a baking sheet lined with parchment paper.
  5. Using a cooking brush, lightly brush each nugget with extra virgin olive oil. This will help achieve that golden-brown color as they bake.
  6. Bake the chicken nuggets in your preheated oven for about 20-25 minutes or until they are golden brown and cooked through. Flip them halfway through for even cooking.
  7. While the nuggets are baking, it’s time to whip up the sauces! In separate bowls, combine the ingredients for each sauce as follows:
    • Honey Mustard Sauce: Mix avocado oil mayo, Dijon mustard, honey, pickle juice, and cayenne pepper.
    • Garlic Parmesan Sauce: Combine avocado oil mayo, lemon juice, Dijon mustard, Worcestershire sauce, grated Parmesan, and grated garlic.
    • Sweet Chili Sauce: Mix sweet Thai chili sauce, ketchup, zest and juice from the lime.
    • Ranch Dressing: Use your favorite store-bought ranch or make your own from scratch.
    • BBQ Sauce: Mix BBQ sauce with melted butter or olive oil for richness and season with seasoned salt and black pepper.
    • Hot Sauce: Simply have your favorite hot sauce ready for serving.
