Ingredients
  

  • 2 cups old-fashioned oats
  • 1 scoop vanilla protein powder I like AboutTime
  • 1 cup unsweetened almond milk or milk of choice
  • 1 cup nonfat plain Greek yogurt
  • 1 tablespoon chia seeds or ground flaxseed meal
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1 tablespoon Greek yogurt plain or vanilla, for topping
  • 1 teaspoon pure maple syrup for topping
  • 1 teaspoon milk of choice for topping

Method
 

  1. In a blender, combine the old-fashioned oats, vanilla protein powder, almond milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, ground cinnamon, and kosher salt. Blend until the mixture is smooth and creamy.
  2. Divide the blended mixture into individual storage containers or jars. Seal them tightly and place them in the refrigerator for at least 4 hours, or preferably overnight, to allow the oats to absorb the liquid and thicken.
  3. When you're ready to serve, take your oats out of the fridge. In a small bowl, mix together the plain or vanilla Greek yogurt, maple syrup, and milk of choice until well combined. This will create a delicious topping.
  4. Spoon the yogurt mixture over the top of your blended cinnamon roll protein overnight oats. You can also sprinkle additional cinnamon or add your favorite fruits and nuts for extra texture and flavor.

Notes

  • Store in airtight containers in the refrigerator for up to 5 days.
  • For a warm breakfast, heat in the microwave for 30-60 seconds.
  • Adjust sweetness with extra maple syrup or honey if desired.
