Method
 

  1. In your blender, combine the unsweetened applesauce, milk, melted butter, eggs, maple syrup, and vanilla extract. Blend until smooth and well combined.
  2. To the blended mixture, add the white whole wheat flour, baking powder, ground cinnamon, and kosher salt. Blend again until just combined. Be careful not to overmix; a few lumps are okay.
  3. While the batter rests for a few minutes, preheat your waffle iron according to the manufacturer's instructions.
  4. Once your waffle iron is hot, lightly grease it with cooking spray or brush it with a little butter. Pour the appropriate amount of batter onto the hot waffle iron, close the lid, and cook until golden brown and crispy.
