Ingredients
  

  • 2 tablespoons butter for frying the onions
  • 1 teaspoon salt or to taste
  • 1 teaspoon pepper or to taste
  • 2 onions sliced
  • 4 burger buns
  • 4 burger patties beef, turkey, or plant-based
  • 4 blue cheese slices
  • 2 large tomatoes sliced
  • baby arugula or baby kale
  • 4 tablespoons sweet and spicy mustard

Method
 

  1. Heat a large skillet over medium heat. Add the butter and let it melt. Toss in the sliced onions, seasoning with salt and pepper. Cook until golden brown and crispy, about 10-15 minutes. Remove from skillet and set aside.
  2. In the same skillet, add the burger patties. Cook to desired doneness, about 4-5 minutes per side for medium. In the last minute, place a slice of blue cheese on each patty to melt.
  3. Slice the burger buns in half and toast them lightly on a separate skillet or in the oven until golden brown.
  4. Assemble the burgers by spreading mustard on the bottom half of each bun. Layer with arugula or kale, followed by the patty with melted blue cheese, fresh tomato slices, and crispy fried onions. Cap with the top half of the bun.
  5. Serve immediately while hot and juicy, paired with your favorite sides.

Notes

  • Store leftover patties in an airtight container for up to 3 days.
  • Keep fried onions crispy by storing them separately at room temperature.
  • Reheat burgers in the microwave or skillet, adding more cheese if desired.
