Ingredients
  

  • 1 medium garlic clove minced
  • 8 ounces blue cheese
  • 1 cup sour cream
  • ½ cup heavy whipping cream
  • kosher salt to taste
  • freshly ground black pepper to taste
  • assorted vegetables for serving

Method
 

  1. Gather all your ingredients. Mince the garlic and set it aside. Crumble the blue cheese into a mixing bowl, leaving some chunks for texture.
  2. In the mixing bowl with the crumbled blue cheese, add the sour cream and heavy whipping cream. Using a fork or potato masher, mix everything together until well combined but still slightly chunky.
  3. Stir in the minced garlic. Season the mixture with kosher salt and freshly ground black pepper to taste.
  4. Cover the bowl with plastic wrap or transfer the dip into a serving bowl. Refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled with assorted vegetables for dipping.

Notes

  • For a vegan version, substitute blue cheese with a vegan alternative.
  • This dip can be stored in the refrigerator for up to a week.
  • If too thick, mix in more heavy cream until desired consistency is reached.
