  • 2 lbs chicken breast cut into bite-sized pieces
  • 1 cup Italian-style breadcrumbs
  • 3/4 cup mayonnaise
  • 1 tsp Mrs. Dash
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper freshly ground
  • 12 small wooden skewers soaked in water for 30 minutes

  1. Step 1: Prepare the Chicken - Begin by cutting the chicken breasts into uniform, bite-sized pieces. This will ensure even cooking and make it easier to skewer them.
  2. Step 2: Make the Coating Mixture - In a mixing bowl, combine the mayonnaise, Mrs. Dash, fine sea salt, and freshly ground black pepper. Mix until well-blended.
  3. Step 3: Coat the Chicken - Add the chicken pieces to the mayonnaise mixture, ensuring each piece is evenly coated. Let it sit for about 10 minutes to absorb the flavors.
  4. Step 4: Bread the Chicken - Place the Italian-style breadcrumbs in a shallow dish. One by one, take each coated chicken piece and roll it in the breadcrumbs until fully covered.
  5. Step 5: Assemble the Skewers - Thread the breaded chicken pieces onto the soaked wooden skewers, leaving a little space between each piece for even cooking.
  6. Step 6: Heat the Oil - In a large skillet, heat a generous amount of extra light olive oil or canola oil over medium-high heat.
  7. Step 7: Fry the Skewers - Carefully place the skewers in the hot oil. Fry for about 4–5 minutes on each side or until the chicken is golden brown and cooked through, reaching an internal temperature of 165°F.
  8. Step 8: Serve and Enjoy - Remove the skewers from the pan and place them on a paper towel-lined plate to absorb any excess oil. Serve immediately with your favorite dipping sauces.

Notes

  • For added flavor, marinate the chicken in the mayonnaise mixture for a few hours or overnight.
