Ingredients

  • 1 pound cavatappi pasta
  • 1 pound breakfast sausage crumbled
  • 1 large onion diced
  • 1 medium red pepper
  • 1 medium jalapeño pepper discard seeds for mildness
  • 1 teaspoon garlic salt
  • 4 tablespoons butter
  • 6 tablespoons flour
  • 4 cups whole milk
  • 2 cups shredded colby jack cheese
  • 2 cups pepper jack cheese
  • 2 cups sharp cheddar cheese
  • Salt and pepper to taste
  • 4 eggs
  • 5 or 6 toasted breakfast biscuits crumbled for topping

Method
 

Cooking Instructions:
  1. Step 1: Cook the Pasta - Start by boiling a large pot of salted water. Add the cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Step 2: Prepare the Sausage and Vegetables - In a large skillet over medium heat, add the crumbled breakfast sausage. Cook until browned, then add the diced onion, red pepper, and jalapeño pepper. Sauté until vegetables are tender. Season with garlic salt, salt, and pepper to taste.
  3. Step 3: Make the Cheese Sauce - In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute until bubbly. Gradually whisk in the milk, cooking until thickened. Stir in the cheeses until melted and creamy.
  4. Step 4: Combine Ingredients - In a large mixing bowl, combine the cooked pasta, sausage and vegetable mixture, and cheese sauce. Mix until well-coated.
  5. Step 5: Add the Eggs - In a small bowl, whisk the eggs and stir them into the pasta mixture to bind the ingredients.
  6. Step 6: Transfer to Baking Dish - Pour the mac and cheese mixture into a greased baking dish, spreading it out evenly.
  7. Step 7: Top with Crumbled Biscuits - Crumble the toasted breakfast biscuits over the top for a crunchy finish.
  8. Step 8: Bake - Place in a preheated oven at 350°F and bake for about 25-30 minutes, until the top is golden brown and bubbly.
