  • 2 medium russet potatoes firm with no blemishes
  • 4 tablespoons extra-virgin olive oil good quality
  • to taste Salt
  • to taste black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • to taste Chopped fresh parsley optional for garnish

Method
 

Instructions:
  1. Step 1: Preheat the broiler. Position the rack about 6 inches below the broiler element.
  2. Step 2: Scrub and dry the potatoes thoroughly. Slice into wedges or cubes.
  3. Step 3: In a mixing bowl, combine the olive oil, salt, black pepper, garlic powder, onion powder, dried oregano, and smoked paprika. Toss the potato pieces until fully coated.
  4. Step 4: Line the baking sheet with parchment paper or aluminum foil. Spread the potatoes in a single layer.
  5. Step 5: Broil for 10-15 minutes, turning halfway through for even browning. Watch closely to prevent burning.
  6. Step 6: Remove from the oven, garnish with parsley if desired, and serve hot.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in a preheated oven for best texture.
  • Sweet potatoes can be used for a different flavor.
