Ingredients

  • 1 teaspoon chili powder adds a subtle kick
  • 1 teaspoon kosher salt enhances overall flavor
  • 1 teaspoon ground black pepper provides a hint of spice
  • 4 pieces boneless, skinless chicken breasts the star of the dish
  • 2 cups shredded mozzarella cheese divided, melts beautifully
  • ½ cup grated Parmesan cheese divided, introduces sharp flavor
  • 1 cup creamy Caesar dressing the key to classic flavor
  • 1 tablespoon lemon juice from ½ lemon, brightens flavors

Equipment

  • Large skillet
  • Measuring spoons
  • Spatula or tongs
  • Oven-safe baking dish

Method

  1. Begin by patting the chicken breasts dry with paper towels. Season both sides with chili powder, kosher salt, and black pepper.
  2. In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through.
  3. Once cooked, reduce heat to low. Pour the creamy Caesar dressing over the chicken, ensuring each piece is well coated. Sprinkle half of the shredded mozzarella and half of the grated Parmesan over the top.
  4. Preheat your oven to 375°F (190°C). Transfer the skillet or chicken to a baking dish and bake for 15-20 minutes, until the cheese is melted and bubbly.
  5. Drizzle the lemon juice over the cheesy chicken after baking. Garnish with extra Parmesan if desired and serve hot.

Notes

  • Use a meat thermometer to ensure chicken is cooked to 165°F (75°C).
  • Pair with roasted vegetables or a crisp salad for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
