Ingredients
  

For the Pasta:
  • 4 ounces uncooked pasta your favorite type, such as fettuccine or penne
For the Salmon:
  • 1/2 pound fresh salmon skinless fillets
  • flour for dredging to create a crust
  • 1/2 tablespoon olive oil for sautéing
  • 1 tablespoon butter adds richness
  • 1 teaspoon Dijon mustard for depth of flavor
  • 2 tablespoons sun-dried tomatoes chopped
  • 3 cloves garlic minced
  • 3/4 cup heavy/whipping cream for a luscious sauce
  • 1 teaspoon fresh lemon juice to brighten the dish
  • 1/2 tablespoon Cajun seasoning for a signature kick
  • fresh basil torn to taste (optional)
  • freshly grated parmesan cheese to taste (optional)
  • Salt & pepper to taste

Method
 

Directions:
  1. Step 1: Cook the Pasta
    Begin by cooking the pasta according to the package instructions. Be sure to salt the water for added flavor. Once al dente, drain the pasta and set it aside.
  2. Step 2: Prepare the Salmon
    While your pasta cooks, pat the salmon fillets dry with a paper towel. Dredge each fillet lightly in flour, shaking off any excess.
  3. Step 3: Sauté the Salmon
    In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the salmon fillets. Cook for about 4-5 minutes on each side, or until golden brown and flaky. Remove from skillet and set aside.
  4. Step 4: Make the Sauce
    In the same skillet, add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the sun-dried tomatoes and cook for an additional minute.
  5. Step 5: Add Cream and Seasonings
    Pour in the heavy cream, Dijon mustard, lemon juice, and Cajun seasoning. Stir well and simmer for about 3-4 minutes until it thickens slightly.
  6. Step 6: Combine Pasta and Sauce
    Add the cooked pasta to the skillet, tossing to coat well with the sauce. Flake the cooked salmon into large pieces and gently fold it into the pasta.
  7. Step 7: Garnish and Serve
    Taste and adjust seasoning with salt and pepper as desired. If using, sprinkle torn basil and parmesan cheese over the top. Serve immediately.

Notes

  • For extra flavor, reserve some pasta water to adjust the sauce consistency.
  • Feel free to substitute salmon with other fish like trout or chicken.
  • This dish can be made ahead of time, just prepare the sauce fresh.
