Ingredients
  

For the Salmon:
  • 4 fillets Salmon skinless, 6-8 oz each
  • 2 tablespoons Olive Oil for cooking
  • 2 tsp Smoked Paprika
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • 1/2 tsp Pepper
  • 1/4-1/2 tsp Cayenne Pepper adjust to taste
For the Sauce:
  • 4 cloves Garlic minced
  • 2 Bell Peppers chopped into 1-inch pieces (any color combo)
  • 1/2 medium Red Onion chopped
  • 1 1/2 cups Low Sodium Chicken Broth
  • 1 tablespoon Cornstarch
  • 1 cup Heavy Cream or evaporated milk + 1 tsp cornstarch
  • 3/4 cup Fire Roasted Diced Tomatoes well drained
  • 1 tablespoon Lime Juice
  • 1/2 cup Parmesan Cheese freshly grated

Method
 

Cooking Instructions:
  1. 1. Prepare the Salmon: Pat the salmon fillets dry with a paper towel to help the spices adhere better.
  2. 2. Season the Salmon: Mix together the spices and rub the mixture generously over both sides of each salmon fillet.
  3. 3. Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add bell peppers and red onion, sauté for 5-7 minutes until tender. Stir in minced garlic and cook for another 1-2 minutes.
  4. 4. Cook the Salmon: Push vegetables to one side, add seasoned salmon fillets to the other. Cook for about 4-5 minutes on each side until cooked through. Remove salmon and set aside.
  5. 5. Create the Creamy Sauce: Pour chicken broth into the skillet and bring to a simmer. Mix cornstarch with some broth until smooth, then stir back into the skillet to thicken.
  6. 6. Add Cream and Tomatoes: Lower heat, stir in heavy cream and fire-roasted tomatoes. Simmer for a few minutes until heated through. Add lime juice and Parmesan cheese until melted.
  7. 7. Combine and Serve: Return salmon to the skillet, spoon the creamy sauce and vegetables over. Warm together for a minute and serve hot.

Notes

  • Ensure salmon is at room temperature for even cooking.
  • Adjust cayenne pepper for desired spice level; omit for milder flavor.
  • Add a splash of white wine to the sauce for richer flavor.
  • Garnish with fresh parsley or cilantro for added freshness.
