Cooking Instructions:
- 1. Prepare the Salmon: Pat the salmon fillets dry with a paper towel to help the spices adhere better.
- 2. Season the Salmon: Mix together the spices and rub the mixture generously over both sides of each salmon fillet.
- 3. Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add bell peppers and red onion, sauté for 5-7 minutes until tender. Stir in minced garlic and cook for another 1-2 minutes.
- 4. Cook the Salmon: Push vegetables to one side, add seasoned salmon fillets to the other. Cook for about 4-5 minutes on each side until cooked through. Remove salmon and set aside.
- 5. Create the Creamy Sauce: Pour chicken broth into the skillet and bring to a simmer. Mix cornstarch with some broth until smooth, then stir back into the skillet to thicken.
- 6. Add Cream and Tomatoes: Lower heat, stir in heavy cream and fire-roasted tomatoes. Simmer for a few minutes until heated through. Add lime juice and Parmesan cheese until melted.
- 7. Combine and Serve: Return salmon to the skillet, spoon the creamy sauce and vegetables over. Warm together for a minute and serve hot.
