Ingredients
  

For the Marinade:
  • 1 lb Beef Steak (flank or sirloin)
  • 1 medium Yellow Onion
  • 2 medium Tomatoes
  • 2 cloves Garlic (minced)
  • 1/4 cup Cilantro (fresh)
  • 1 lime Lime Juice
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive Oil

Method
 

Preparation Steps:
  1. In a mixing bowl, combine lime juice, minced garlic, cumin, salt, and pepper. Stir well to create a marinade.
  2. Place the beef steak into the bowl with the marinade, ensuring it is well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  3. While the steak is marinating, slice the yellow onion and dice the tomatoes. Set aside.
  4. Heat a skillet or griddle over medium-high heat and add olive oil. Once hot, remove the steak from the marinade and sear for about 4-5 minutes on each side, or until it reaches your desired level of doneness. Remove from the skillet and let it rest.
  5. In the same skillet, add a little more olive oil if necessary. Sauté the sliced onions until they become translucent. Add the diced tomatoes and cook for another 2-3 minutes, allowing the tomatoes to soften.
  6. Slice the rested steak against the grain and serve it topped with the sautéed onions and tomatoes. Garnish with fresh cilantro for an extra burst of flavor.

Notes

  • For the best flavor, marinate your beef overnight if you have the time.
  • Feel free to adjust the spices in the marinade to suit your taste preferences.
  • Using a cast iron skillet can give you a great sear and flavor to the meat.
