Preparation Steps:
- In a mixing bowl, combine lime juice, minced garlic, cumin, salt, and pepper. Stir well to create a marinade.
- Place the beef steak into the bowl with the marinade, ensuring it is well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- While the steak is marinating, slice the yellow onion and dice the tomatoes. Set aside.
- Heat a skillet or griddle over medium-high heat and add olive oil. Once hot, remove the steak from the marinade and sear for about 4-5 minutes on each side, or until it reaches your desired level of doneness. Remove from the skillet and let it rest.
- In the same skillet, add a little more olive oil if necessary. Sauté the sliced onions until they become translucent. Add the diced tomatoes and cook for another 2-3 minutes, allowing the tomatoes to soften.
- Slice the rested steak against the grain and serve it topped with the sautéed onions and tomatoes. Garnish with fresh cilantro for an extra burst of flavor.
Notes
- For the best flavor, marinate your beef overnight if you have the time.
- Feel free to adjust the spices in the marinade to suit your taste preferences.
- Using a cast iron skillet can give you a great sear and flavor to the meat.
