Ingredients
  

For the Queso:
  • 1 cup raw cashews soaked
  • 1/2 cup water
  • 1 can diced green chiles 4 oz., with liquid
  • 1/4 cup nutritional yeast
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt

Method
 

Instructions:
  1. Step 1: Prepare the Cashews - Soak cashews in water for at least 2 hours or boil for 10 minutes.
  2. Step 2: Blend the Ingredients - In a blender, combine cashews, water, green chiles, nutritional yeast, lemon juice, onion powder, garlic powder, smoked paprika, and salt.
  3. Step 3: Blend Until Smooth - Blend on high until the mixture is creamy, about 1-2 minutes.
  4. Step 4: Taste and Adjust - Adjust seasonings to taste, adding jalapeños or hot sauce if desired.
  5. Step 5: Serve and Enjoy - Transfer to a serving bowl and enjoy warm with tortilla chips or tacos.

Notes

  • For a spicier version, add diced jalapeños.
  • Adjust water for desired consistency—less for thicker dip.
  • Store leftovers in an airtight container for 3-5 days.
