  • 1 head cauliflower (or a 16 oz bag of frozen cauliflower)
  • 1 cup shredded cheddar cheese
  • 1/4 cup parmesan cheese
  • 2 large eggs
  • 1 cup bread crumbs (panko or Italian)
  • 1/2 teaspoon Italian seasoning (optional)
  • 1/2 teaspoon cayenne pepper (more or less to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic or onion powder
  • Olive or canola oil (for frying)

  1. Step 1: Prepare the Cauliflower - If using a head of cauliflower, remove the leaves and stem, and chop it into florets. Bring a large pot of salted water to a boil and add the cauliflower. Cook until tender, about 8-10 minutes. If using frozen cauliflower, simply steam it according to package instructions until tender.
  2. Step 2: Drain and Mash - Once the cauliflower is cooked, drain it well and let it cool slightly. Transfer the cauliflower to a large mixing bowl and mash it with a fork or potato masher until relatively smooth but still slightly chunky.
  3. Step 3: Mix the Ingredients - Add in the shredded cheddar cheese, parmesan cheese, eggs, bread crumbs, Italian seasoning, cayenne pepper, salt, pepper, and garlic or onion powder. Mix everything together until well combined.
  4. Step 4: Shape the Fritters - Using your hands, form the mixture into small patties, about 2-3 inches in diameter. Place them on a plate or baking sheet as you go.
  5. Step 5: Heat the Oil - In a large frying pan, heat about 1 tablespoon of olive or canola oil over medium heat. You may need to add more oil as you cook the fritters, depending on how many you make.
  6. Step 6: Cook the Fritters - Once the oil is hot, carefully add a few fritters to the pan, making sure not to overcrowd them. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy. Remove them from the pan and place them on a paper towel-lined plate to absorb any excess oil.
  7. Step 7: Serve and Enjoy - Serve your Cauliflower Cheddar Fritters (Pancakes) warm, maybe with a side of creamy yogurt or sour cream for dipping. They are also delicious on their own or alongside a fresh salad.

Notes

  • To store leftover fritters, allow them to cool completely and then place them in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze the fritters in a single layer on a baking sheet, then transfer them to a freezer bag for up to 2 months.
  • Reheat frozen fritters in the oven or skillet when ready to enjoy again.
