Ingredients
  

  • 500 g white flour
  • 80 g butter cold and cubed
  • 150 g sheep's cheese or cheddar
  • 1 tsp turmeric
  • 1 tsp salt
  • 1 tsp bicarbonate (baking soda)
  • 2 medium eggs for dough
  • 150 ml yogurt
  • to taste grated parmesan for topping

Method
 

  1. Step 1: Preheat your oven to 200°C (400°F).
  2. Step 2: In a large mixing bowl, combine the flour, salt, bicarbonate, and turmeric. Whisk until well mixed.
  3. Step 3: Add the cubed butter to the flour mixture and cut it in until it resembles coarse crumbs.
  4. Step 4: Fold in the cheese until evenly distributed.
  5. Step 5: In a separate bowl, whisk together the eggs and yogurt until smooth.
  6. Step 6: Pour the egg mixture into the dry ingredients and stir gently until just combined.
  7. Step 7: Transfer the dough to a floured surface and shape it into a disc about 2-3 cm thick.
  8. Step 8: Cut the dough into desired shapes and place on a baking sheet lined with parchment paper.
  9. Step 9: Brush the tops with the egg wash and sprinkle with parmesan.
  10. Step 10: Bake for 15-20 minutes until golden brown.
  11. Step 11: Cool on a wire rack and serve warm.

  • For a twist, add fresh herbs like chives or dill.
  • Store leftovers in an airtight container for up to 2 days.
  • Freeze scones separated by parchment for up to a month.
