Ingredients
  

  • 4 ounces cream cheese softened
  • 1/3 cup Buffalo wing sauce
  • 2 tablespoons ranch dressing
  • 2 cups shredded cooked chicken use rotisserie chicken for convenience
  • 1 1/2 cups shredded cheddar cheese or colby jack cheese
  • 1/3 cup blue cheese crumbles omit if you prefer
  • 2 green onions sliced
  • Black pepper to taste
  • 12 small flour or corn tortillas
  • Ranch dressing for serving

Method
 

  1. Preheat your oven to 400°F (200°C) to ensure even cooking and crispy texture.
  2. In a mixing bowl, combine the softened cream cheese, Buffalo wing sauce, ranch dressing, and black pepper. Mix well until creamy and smooth.
  3. Fold in the shredded cooked chicken, 1 cup of shredded cheese, blue cheese crumbles (if using), and sliced green onions. Mix until well combined.
  4. Take a tortilla and add about 2-3 tablespoons of the filling along the center. Roll tightly, tucking in the ends as you go. Place seam-side down on a baking sheet lined with parchment paper. Repeat with remaining tortillas and filling.
  5. Sprinkle the remaining 1/2 cup of shredded cheese on top of the rolled taquitos for an extra cheesy finish.
  6. Lightly spray the taquitos with cooking spray. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
  7. Once baked, remove from the oven and cool for a few minutes. Serve with ranch dressing on the side for dipping.

  • Warm tortillas slightly before rolling to prevent cracking.
