Preheat your oven to 400°F (200°C) to ensure even cooking and crispy texture.
In a mixing bowl, combine the softened cream cheese, Buffalo wing sauce, ranch dressing, and black pepper. Mix well until creamy and smooth.
Fold in the shredded cooked chicken, 1 cup of shredded cheese, blue cheese crumbles (if using), and sliced green onions. Mix until well combined.
Take a tortilla and add about 2-3 tablespoons of the filling along the center. Roll tightly, tucking in the ends as you go. Place seam-side down on a baking sheet lined with parchment paper. Repeat with remaining tortillas and filling.
Sprinkle the remaining 1/2 cup of shredded cheese on top of the rolled taquitos for an extra cheesy finish.
Lightly spray the taquitos with cooking spray. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
Once baked, remove from the oven and cool for a few minutes. Serve with ranch dressing on the side for dipping.
