Instructions:
- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a medium bowl, combine the drained and rinsed chickpeas with olive oil, cumin, smoked paprika, salt, and pepper. Toss until well coated. Spread chickpeas on a baking sheet lined with parchment paper and roast for 20-25 minutes, stirring halfway through.
- Step 3: In another mixing bowl, combine roasted garlic hummus, grated cheddar cheese, cilantro, and the lightly beaten egg. Mix well.
- Step 4: Once the chickpeas are roasted, let them cool and then fold them into the hummus mixture.
- Step 5: Scoop portions of the mixture and form into small bites, pressing a cube of cheddar cheese into the center of each.
- Step 6: Place the bites on a baking sheet sprayed with cooking spray and bake for 15-20 minutes until golden brown.
- Step 7: Remove from the oven, let cool slightly, and serve warm with guacamole.

- For a vegan option, substitute cheese with a vegan alternative.
- Chickpeas can be prepared ahead and stored in the refrigerator until ready to bake.
