Ingredients
  

For the Bites:
  • 1 can chickpeas (13 ounces, drained and rinsed)
  • 1 tablespoon extra-virgin olive oil
  • 1 1/4 teaspoons cumin
  • 3/4 teaspoons smoked paprika
  • to taste salt
  • to taste pepper
  • 10 ounces roasted garlic hummus
  • 1/2 cup cheddar cheese (grated)
  • 16 1/2-inch cubes cheddar cheese
  • 2 tablespoons cilantro (minced)
  • 1 large egg (lightly beaten)
  • as needed cooking spray
  • as needed guacamole (for dipping)

Method
 

Instructions:
  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a medium bowl, combine the drained and rinsed chickpeas with olive oil, cumin, smoked paprika, salt, and pepper. Toss until well coated. Spread chickpeas on a baking sheet lined with parchment paper and roast for 20-25 minutes, stirring halfway through.
  3. Step 3: In another mixing bowl, combine roasted garlic hummus, grated cheddar cheese, cilantro, and the lightly beaten egg. Mix well.
  4. Step 4: Once the chickpeas are roasted, let them cool and then fold them into the hummus mixture.
  5. Step 5: Scoop portions of the mixture and form into small bites, pressing a cube of cheddar cheese into the center of each.
  6. Step 6: Place the bites on a baking sheet sprayed with cooking spray and bake for 15-20 minutes until golden brown.
  7. Step 7: Remove from the oven, let cool slightly, and serve warm with guacamole.

Notes

  • For a vegan option, substitute cheese with a vegan alternative.
  • Chickpeas can be prepared ahead and stored in the refrigerator until ready to bake.
  • These bites can be frozen and baked directly from the freezer, adding extra time.
