Ingredients

For the Casserole:
  • 1 box Chicken flavor Rice-A-Roni
  • 1 can unsalted Cream of Chicken Soup 10.5-oz
  • 1 cup sour cream
  • 4 cups cooked, chopped chicken or 1 whole rotisserie chicken
  • 1 can French fried onions 6-oz

Equipment

  • Large mixing bowl
  • 9x13 inch baking dish
  • Wooden spoon or spatula
  • Oven

Method

Preparation Steps:
  1. Start by cooking the Chicken flavor Rice-A-Roni according to the package instructions. This usually involves sautéing the rice in a bit of oil, adding water, and letting it simmer until fluffy. Once cooked, set it aside to cool slightly.
  2. In a large mixing bowl, combine the cooked Rice-a-Roni, unsalted cream of chicken soup, and sour cream. Stir until everything is well mixed.
  3. Next, fold in the cooked, chopped chicken. If you're using rotisserie chicken, make sure to remove the skin and bone before adding it to the mixture.
  4. Pour the mixture into a greased 9x13-inch baking dish. Spread it out evenly, ensuring that all the ingredients are well-distributed.
  5. Open the can of French fried onions and sprinkle them generously over the top of the casserole.
  6. Place the casserole in a preheated oven at 350°F (175°C) and bake for 25-30 minutes, or until the casserole is heated through and the onions are golden brown and crispy.

Notes

  • Use Greek yogurt instead of sour cream for a lighter option.
  • Add vegetables like broccoli or spinach for extra nutrition.
  • Store leftovers in the refrigerator for up to 3 days.
