Ingredients
  

For the Salad:
  • 14 oz red and green cabbage shredded
  • 1 cup carrots grated
  • 1 cup yellow bell pepper chopped
  • 3 whole green onions chopped
  • 1/4 cup fresh cilantro chopped
  • 11 oz can mandarin oranges well drained
  • 1 cup chow mein noodles
  • 1/4 cup sliced almonds toasted
  • 1/3 cup red onion chopped
  • 1 clove garlic finely minced
  • 1 1/2 teaspoons ginger finely minced
  • 1 1/2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon white vinegar
  • 2 tablespoons canola oil or vegetable oil
  • Salt to taste
  • Black pepper to taste

Method
 

Instructions:
  1. Start by shredding the red and green cabbage. You want the shreds to be thin for a better texture. Next, grate the carrots and chop the yellow bell pepper, green onions, and red onion. Set these aside in a large mixing bowl.
  2. To the bowl of chopped vegetables, add the minced garlic, ginger, cilantro, and the drained mandarin oranges. The citrus will add a wonderful sweetness to the salad.
  3. In a separate small bowl, whisk together the soy sauce, brown sugar, sesame oil, white vinegar, canola oil, salt, and black pepper. Mix until the sugar dissolves and the dressing is well combined.
  4. Pour the dressing over the vegetable mixture and toss gently until everything is evenly coated. Be careful not to break the mandarin oranges while mixing.
  5. Just before serving, add the chow mein noodles and toasted almonds to the salad. This will ensure they remain crunchy, providing a delightful contrast to the soft vegetables.
  6. Your Chinese Cabbage Salad is now ready to be served! You can garnish with a few extra almonds or cilantro if desired. Serve it chilled or at room temperature, and watch your guests delight in every bite.
