Instructions:
- Start by shredding the red and green cabbage. You want the shreds to be thin for a better texture. Next, grate the carrots and chop the yellow bell pepper, green onions, and red onion. Set these aside in a large mixing bowl.
- To the bowl of chopped vegetables, add the minced garlic, ginger, cilantro, and the drained mandarin oranges. The citrus will add a wonderful sweetness to the salad.
- In a separate small bowl, whisk together the soy sauce, brown sugar, sesame oil, white vinegar, canola oil, salt, and black pepper. Mix until the sugar dissolves and the dressing is well combined.
- Pour the dressing over the vegetable mixture and toss gently until everything is evenly coated. Be careful not to break the mandarin oranges while mixing.
- Just before serving, add the chow mein noodles and toasted almonds to the salad. This will ensure they remain crunchy, providing a delightful contrast to the soft vegetables.
- Your Chinese Cabbage Salad is now ready to be served! You can garnish with a few extra almonds or cilantro if desired. Serve it chilled or at room temperature, and watch your guests delight in every bite.
Notes
- Store in an airtight container for up to 2-3 days for best freshness.
- For a twist, add seasonal fruits like apples or pomegranate in winter.
- Prepare dressing and salad components separately if making in advance to prevent sogginess.
