Ingredients
  

For the Cookies:
  • 1.67 cup All-purpose flour
  • 0.33 cup Cocoa powder preferably dark or Dutch-processed
  • 0.25 cup Black sesame powder or finely ground black sesame seeds
  • 0.75 teaspoon Baking powder
  • 0.25 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter at room temperature
  • 1 cup Light brown sugar packed
  • 0.5 cup Granulated sugar
  • 2 large Eggs
  • 0.5 teaspoon Vanilla extract
  • 0.5 teaspoon Soy sauce optional, but recommended
  • 1 cup Chocolate chips dark or semisweet
  • Black sesame seeds for topping

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a medium bowl, whisk together the all-purpose flour, cocoa powder, black sesame powder, baking powder, baking soda, and salt.
  3. Step 3: In a large bowl, beat the unsalted butter, light brown sugar, and granulated sugar together until light and fluffy.
  4. Step 4: Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract and soy sauce.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Step 6: Gently fold in the chocolate chips until evenly distributed throughout the dough.
  7. Step 7: Using a cookie scoop or tablespoon, drop rounded balls of dough onto a baking sheet lined with parchment paper.
  8. Step 8: Sprinkle a few black sesame seeds on top of each cookie for an added crunch.
  9. Step 9: Bake in the preheated oven for 10-12 minutes.
  10. Step 10: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

  • For a more intense black sesame flavor, toast the black sesame seeds before grinding them into powder.
  • These cookies can be made ahead of time and frozen for up to 3 months.
  • Feel free to experiment with different types of chocolate chips.
