Ingredients
  

  • 1.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2/3 cup buttermilk (or 2/3 cup milk + 1 teaspoon vinegar, let it sit for 5 minutes)
  • 1/4 cup maple syrup
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup chocolate chips (more if desired)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease your muffin tin with baking spray or line it with paper liners.
  3. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.
  4. In another bowl, mix together the buttermilk (or milk and vinegar mixture), maple syrup, vegetable oil, and eggs. Whisk until smooth.
  5. Pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a spatula until just combined.
  6. Gently fold in the chocolate chips until evenly distributed.
  7. Fill each muffin cup about 2/3 full with the batter.
  8. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack.

Notes

  • These muffins can be made ahead and stored in an airtight container for several days.
  • Feel free to substitute chocolate chips with nuts or dried fruit.
  • For a healthier option, consider using whole wheat flour or Greek yogurt.
