  • 2 cups dates deseeded
  • 1 cup nuts almonds, cashews, walnuts, or nuts of choice
  • ½ cup desiccated coconut plus more for rolling
  • ½ cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

  1. Begin by deseeding the dates. If your dates are hard, soak them in warm water for about 10 minutes to soften them before using.
  2. In a food processor, combine the dates, nuts, desiccated coconut, cocoa powder, vanilla extract, and a pinch of salt. Process until the mixture is sticky and well combined. You may need to scrape down the sides of the bowl a couple of times to ensure everything mixes evenly.
  3. Once your mixture is ready, take small amounts and roll them into bite-sized balls using your hands. Aim for about 1 inch in diameter.
  4. If you like, roll each ball in extra desiccated coconut to coat them. This adds a nice texture and enhances the coconut flavor.
  5. Place the finished Chocolate Date Balls on a tray or plate and refrigerate for at least 30 minutes to firm them up. Enjoy them as a tasty snack or dessert!

Notes

  • If your mixture is too crumbly, add a teaspoon of water or a little more vanilla extract to help it come together.
  • For a richer chocolate flavor, consider using dark cocoa powder.
