Cinnamon Sugar Bagels

Ingredients
  

  • 1.5 cups very warm water (think hot bathwater)
  • 2 packets active dry yeast (about 4 1/2 teaspoons)
  • 3 tablespoons brown sugar
  • 1 teaspoon salt
  • 3.5 - 4 cups bread flour
  • 2 tablespoons honey
  • 1 large egg
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • water (for boiling)

Method
 

  1. In a large mixing bowl, combine the very warm water and brown sugar. Sprinkle the active dry yeast on top and let it sit for about 5-10 minutes until frothy.
  2. Once frothy, add the salt and 3 1/2 cups of bread flour to the bowl. Stir with a wooden spoon until the dough starts to come together.
  3. Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place the kneaded dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Once risen, punch down the dough, divide into 8 pieces, and shape each into a ring.
  6. Bring a large pot of water to a boil, add honey, and boil bagels for about 1 minute on each side.
  7. While boiling, whisk together the granulated sugar and cinnamon. Preheat oven to 425°F (220°C).
  8. After boiling, place bagels on a baking sheet, brush with beaten egg, and sprinkle with cinnamon sugar mixture. Bake for 20-25 minutes until golden brown.
  9. Transfer bagels to a cooling rack and enjoy warm, toasted, or with your favorite spread.

Notes

  • For a unique twist, try adding raisins or nuts to the dough.
  • Bagels can be frozen for up to 3 months; just toast before serving.
  • Experiment with different toppings, like everything bagel seasoning!
