In a large mixing bowl, combine the very warm water and brown sugar. Sprinkle the active dry yeast on top and let it sit for about 5-10 minutes until frothy.
Once frothy, add the salt and 3 1/2 cups of bread flour to the bowl. Stir with a wooden spoon until the dough starts to come together.
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
Place the kneaded dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Once risen, punch down the dough, divide into 8 pieces, and shape each into a ring.
Bring a large pot of water to a boil, add honey, and boil bagels for about 1 minute on each side.
While boiling, whisk together the granulated sugar and cinnamon. Preheat oven to 425°F (220°C).
After boiling, place bagels on a baking sheet, brush with beaten egg, and sprinkle with cinnamon sugar mixture. Bake for 20-25 minutes until golden brown.
Transfer bagels to a cooling rack and enjoy warm, toasted, or with your favorite spread.
