Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 2 medium very ripe bananas
  • 1/2 cup vegetable or canola oil
  • 1 cup sour cream or Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 1 cup packed brown sugar
  • 1 tablespoon unsalted butter, melted
  • 2 tablespoons granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping
  • 2 large eggs

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Grease a 9x5-inch loaf pan with butter or oil, or line it with parchment paper.
  3. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and cloves.
  4. Mash the very ripe bananas in another bowl until smooth.
  5. Add oil, sour cream, vanilla extract, brown sugar, melted butter, and eggs to the mashed bananas. Mix until smooth.
  6. Gradually fold the dry ingredients into the wet mixture until just combined.
  7. In a small bowl, mix granulated sugar and ground cinnamon for the topping.
  8. Pour the batter into the prepared loaf pan and sprinkle cinnamon sugar on top.
  9. Bake for 55-65 minutes, or until a toothpick comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

  • Add 1/2 cup of chopped walnuts or pecans for extra flavor.
