Ingredients

  • 2 cups rolled oats
  • 1.5 cups desiccated coconut
  • 1 cup all-natural peanut butter
  • 0.25 cup honey
  • 0.25 cup chia seeds
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla essence
  • 0.5 teaspoon salt
  • 0.5 cup dark chocolate drops

Equipment

  • Mixing bowl
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Baking sheet or tray
  • Parchment paper

Method

  1. Step 1: Prepare Your Ingredients - Start by measuring out all your ingredients. This will make the mixing process much smoother and help you stay organized.
  2. Step 2: Mix the Dry Ingredients - In a large mixing bowl, combine the rolled oats, desiccated coconut, chia seeds, ground cinnamon, and salt. Stir until evenly mixed.
  3. Step 3: Add the Wet Ingredients - Next, add the peanut butter, honey, and vanilla essence to the dry mixture. Use a wooden spoon to combine everything well. The mixture should start to come together and form a sticky dough.
  4. Step 4: Fold in the Chocolate Drops - Gently fold in the dark chocolate drops, making sure they are evenly distributed throughout the mixture.
  5. Step 5: Roll into Bites - Using your hands, take small portions of the mixture and roll them into bite-sized balls. Aim for about 1 inch in diameter. Place each rolled bite on a baking sheet lined with parchment paper.
  6. Step 6: Chill and Set - Once all the bites are rolled, place the baking sheet in the refrigerator for at least 30 minutes. This will help them firm up and hold their shape.
  7. Step 7: Enjoy! - After chilling, your Cookie Dough Energy Bites are ready to enjoy! You can keep them stored in the fridge in an airtight container for up to a week—or even longer if you freeze them!
