Ingredients
  

  • 14 oz sweetened coconut flakes
  • 1/2 cup powdered sugar
  • 4 tbsp butter softened
  • 2 tbsp corn syrup
  • 20 to 24 almonds raw or toasted
  • 16 oz chocolate candy coating Candiquik or similar

Method
 

  1. In a large mixing bowl, combine the sweetened coconut flakes, powdered sugar, softened butter, and corn syrup. Mix until well combined and forms a sticky mixture.
  2. Using a cookie scoop or your hands, take a portion of the coconut mixture and shape it into a rectangular bar. Place the formed bars on a parchment-lined baking sheet. Repeat until all the coconut mixture is used.
  3. Press one almond into the center of each coconut bar, ensuring it sticks well.
  4. Place the baking sheet with the bars in the refrigerator for about 30 minutes to allow them to firm up.
  5. Melt the chocolate candy coating using a double boiler or in the microwave in 30-second intervals, stirring in between until smooth.
  6. Once the coconut bars are firm, dip each bar into the melted chocolate coating, ensuring they are fully covered.
  7. Return the chocolate-coated bars to the parchment-lined baking sheet. Let them sit at room temperature until the chocolate hardens.

Notes

  • For a healthier option, use unsweetened coconut.
  • Swap butter for coconut oil for a coconut flavor.
  • Store in an airtight container at room temperature for up to one week.
