Instructions:
- Step 1: Cook the Tortellini. Bring a large pot of salted water to a boil. Add tortellini and cook according to package instructions (3-5 minutes) until they float. Drain and set aside.
- Step 2: Sauté the Shrimp and Sausage. In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook sausage for 3-4 minutes until browned. Add shrimp and Cajun seasoning, cook until shrimp are pink and opaque (3-4 minutes). Remove from skillet.
- Step 3: Cook the Vegetables. Add remaining olive oil to the skillet, sauté onion, red bell pepper, and garlic for about 5 minutes until softened.
- Step 4: Make the Creamy Sauce. Add butter to the skillet, let it melt. Pour in heavy cream, simmer for 2-3 minutes. Season with thyme, cayenne, and salt to taste.
- Step 5: Combine Everything. Return shrimp and sausage to skillet. Add tortellini, toss until coated in sauce. Stir in Parmesan until melted.
- Step 6: Garnish and Serve. Remove from heat, sprinkle with parsley. Serve immediately and enjoy!
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in a skillet over low heat, adding a splash of cream to revive the sauce.
