Ingredients
  

For the Dish:
  • 1 package refrigerated cheese tortellini 16-ounce
  • 2 tablespoons olive oil divided
  • 1.5 pounds medium to large shrimp peeled and deveined
  • 1 teaspoon Cajun or Creole seasoning
  • 0.5 medium yellow or sweet onion diced
  • 0.5 red bell pepper diced
  • 8 ounces smoked sausage sliced
  • 2 cloves garlic minced
  • 0.5 cup butter salted
  • 1 cup heavy cream
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon cayenne pepper optional
  • 0.5 cup Parmesan cheese freshly grated
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

Instructions:
  1. Step 1: Cook the Tortellini. Bring a large pot of salted water to a boil. Add tortellini and cook according to package instructions (3-5 minutes) until they float. Drain and set aside.
  2. Step 2: Sauté the Shrimp and Sausage. In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook sausage for 3-4 minutes until browned. Add shrimp and Cajun seasoning, cook until shrimp are pink and opaque (3-4 minutes). Remove from skillet.
  3. Step 3: Cook the Vegetables. Add remaining olive oil to the skillet, sauté onion, red bell pepper, and garlic for about 5 minutes until softened.
  4. Step 4: Make the Creamy Sauce. Add butter to the skillet, let it melt. Pour in heavy cream, simmer for 2-3 minutes. Season with thyme, cayenne, and salt to taste.
  5. Step 5: Combine Everything. Return shrimp and sausage to skillet. Add tortellini, toss until coated in sauce. Stir in Parmesan until melted.
  6. Step 6: Garnish and Serve. Remove from heat, sprinkle with parsley. Serve immediately and enjoy!

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat in a skillet over low heat, adding a splash of cream to revive the sauce.
  • Try adding spinach or kale for extra nutrition!
