  • 1/2 teaspoon pepper freshly cracked
  • 3 sprigs fresh thyme optional
  • finely chopped fresh parsley or fresh thyme leaves or finely grated Parmesan for garnish

Method
 

Instructions:
  1. Step 1: Preheat your oven to 425°F (220°C). The high temperature is crucial for achieving that crispy exterior.
  2. Step 2: Wash the baby gold potatoes thoroughly. Cut them in half, ensuring they are of even size for consistent cooking.
  3. Step 3: In a mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until well mixed.
  4. Step 4: Add the halved potatoes to the bowl with the seasoning mixture. Toss until all the potatoes are evenly coated.
  5. Step 5: Spread the seasoned potatoes in a single layer on a large baking sheet. Make sure they are not overcrowded.
  6. Step 6: Place the baking sheet in the preheated oven and roast for 30-35 minutes, flipping halfway through.
  7. Step 7: If using, add the fresh thyme sprigs during the last 10 minutes of roasting for an aromatic finish.
