Crockpot Queso Chicken

Ingredients
  

  • 3 pieces boneless skinless chicken breasts
  • 1 tablespoon taco seasoning
  • 10 ounces Rotel (diced tomatoes and green chiles)
  • 8 ounces cream cheese
  • 16 ounces queso cheese
  • to taste Green onion tops optional, for garnish

Method
 

  1. Start by placing the 3 boneless skinless chicken breasts at the bottom of the crockpot.
  2. Sprinkle the 1 tablespoon of taco seasoning evenly over the chicken breasts.
  3. Open the can of Rotel and pour the contents over the seasoned chicken.
  4. Cut the 8 ounces of cream cheese into chunks and place them on top of the chicken and Rotel.
  5. Add the 16 ounces of queso cheese on top.
  6. Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
  7. Once the cooking time is up, shred the chicken right in the crockpot with two forks.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • You can freeze the dish for up to 3 months.
  • To reheat, add a splash of milk to restore creaminess.
