- Mix ground cumin, turmeric, ground coriander, ground ginger, and sea salt in a small bowl for the spice blend.
- Pat the sole fillets dry. Drizzle 2 teaspoons of olive oil over the fillets and sprinkle the spice mixture evenly on both sides.
- In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add minced garlic and sauté for about 30 seconds until fragrant.
- Carefully place the seasoned sole fillets in the skillet. Cook for about 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork.
- In the same skillet, add the chopped kale. Season with salt and pepper to taste. Sauté for about 5 minutes until the kale is wilted and tender.
- Serve by placing sautéed kale on a plate, topping it with curry-spiced sole fillets, and finishing with a squeeze of fresh lemon juice.
