  • 1 tsp Ground ginger adds warmth and spice
  • 1/8 tsp Sea salt enhances flavors
  • 1 Tbsp Olive oil for sautéing garlic and kale
  • 3 cloves Garlic minced
  • 1 head Kale roughly chopped
  • to taste Salt and pepper for seasoning

Method
 

Directions
  1. Mix ground cumin, turmeric, ground coriander, ground ginger, and sea salt in a small bowl for the spice blend.
  2. Pat the sole fillets dry. Drizzle 2 teaspoons of olive oil over the fillets and sprinkle the spice mixture evenly on both sides.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Carefully place the seasoned sole fillets in the skillet. Cook for about 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork.
  5. In the same skillet, add the chopped kale. Season with salt and pepper to taste. Sauté for about 5 minutes until the kale is wilted and tender.
  6. Serve by placing sautéed kale on a plate, topping it with curry-spiced sole fillets, and finishing with a squeeze of fresh lemon juice.

Notes

  • For a different flavor, try substituting cod or tilapia for sole.
  • Fresh spices enhance the dish; avoid using low-quality spices.
  • Serve with rice or a green salad for a complete meal.
