Ingredients
  

For the Pancake Puppies:
  • 2 cups pancake mix the kind where you only need to add water
  • 1 cup water adjust as necessary for desired batter consistency
  • to taste oil for frying choose a neutral oil like vegetable or canola
  • to taste powdered sugar for dusting before serving
  • to taste maple syrup for dipping (optional but recommended)

  • Whisk
  • Deep frying pan or pot
  • Slotted spoon
  • Paper towels
  • Serving plate

Method
 

Instructions:
  1. In a large mixing bowl, combine the 2 cups of pancake mix with 1 cup of water. Use a whisk to blend the ingredients until smooth. Make sure there are no lumps, but don’t overmix as this can lead to tough pancakes.
  2. In a deep frying pan or pot, heat about 2 inches of oil over medium heat. You want the oil to reach around 350°F (175°C) for optimal frying. To test if the oil is ready, drop a small amount of batter into the oil; if it bubbles and rises to the surface, you’re good to go!
  3. Using a tablespoon or a small cookie scoop, carefully drop spoonfuls of the batter into the hot oil. Fry the puppies in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side or until they are golden brown.
  4. Once cooked, use a slotted spoon to remove the pancake puppies from the oil and place them on a plate lined with paper towels to drain any excess oil.
  5. Once all the pancake puppies are cooked and drained, dust them with powdered sugar while they are still warm. Serve them warm with a side of maple syrup for dipping. Enjoy your fluffy, delightful bites!

Notes

  • For a healthier version, consider using whole wheat pancake mix.
  • Try adding chocolate chips or blueberries to the batter for extra flavor.
  • Store leftovers in an airtight container for up to 2 days.
