- In a large mixing bowl, combine the 2 cups of pancake mix with 1 cup of water. Use a whisk to blend the ingredients until smooth. Make sure there are no lumps, but don’t overmix as this can lead to tough pancakes.
- In a deep frying pan or pot, heat about 2 inches of oil over medium heat. You want the oil to reach around 350°F (175°C) for optimal frying. To test if the oil is ready, drop a small amount of batter into the oil; if it bubbles and rises to the surface, you’re good to go!
- Using a tablespoon or a small cookie scoop, carefully drop spoonfuls of the batter into the hot oil. Fry the puppies in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side or until they are golden brown.
- Once cooked, use a slotted spoon to remove the pancake puppies from the oil and place them on a plate lined with paper towels to drain any excess oil.
- Once all the pancake puppies are cooked and drained, dust them with powdered sugar while they are still warm. Serve them warm with a side of maple syrup for dipping. Enjoy your fluffy, delightful bites!
