Ingredients

  • 40 grams Maizena (cornstarch)
  • 1/2 tsp salt or kosher salt
  • 2 tsp vanilla extract
  • 500 grams firm cream cheese sold in blocks
  • 3 large free-range eggs
  • 250 ml regular or heavy cream

Method
 

  1. Step 1: Prepare the Loaf Pan - Start by lining your loaf pan with parchment paper. Make sure to leave some overhang on the sides, which will help you lift the cheesecake out once it’s baked.
  2. Step 2: Beat the Cream Cheese - In a mixing bowl, add the firm cream cheese. Use an electric mixer or a whisk to beat it until it’s smooth and creamy, free of lumps.
  3. Step 3: Add Sugar and Salt - Gradually add the sugar and salt to the cream cheese, continuing to mix until everything is well-combined.
  4. Step 4: Incorporate the Cornstarch - Add the Maizena (cornstarch) to the mixture. This will help stabilize the cheesecake as it bakes. Mix until fully incorporated.
  5. Step 5: Mix in the Eggs - Crack the three large free-range eggs into the bowl, and mix until just combined.
  6. Step 6: Pour in the Cream and Vanilla - Add the heavy cream and vanilla extract to the mixture. Mix until you achieve a smooth batter.
  7. Step 7: Pour the Batter into the Pan - Pour the cheesecake batter into the prepared loaf pan. Smooth the top with a spatula for an even surface.
  8. Step 8: Air Fry the Cheesecake - Preheat your air fryer to 160°C (320°F). Once preheated, place the loaf pan in the air fryer basket. Cook for about 25-30 minutes.
  9. Step 9: Cool and Chill - Once the cheesecake is done, remove it from the air fryer and let it cool at room temperature for about an hour. Then, transfer it to the refrigerator and chill for at least 4 hours.
