  • 2 pounds salmon fillets fresh, high-quality
  • 1 tablespoon avocado oil
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • 1 tablespoon butter
  • 1 teaspoon garlic minced
  • 1 tablespoon all-purpose flour
  • 3/4 cup whole milk or non-dairy milk
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon Dijon mustard

Method
 

  1. Preheat your oven to 375°F (190°C). This ensures that your salmon cooks evenly and thoroughly.
  2. Place the salmon fillets skin-side down in a greased baking dish. Drizzle with avocado oil and season generously with salt and pepper.
  3. In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the flour and cook for another minute, stirring constantly.
  4. Gradually whisk in the whole milk, stirring continuously to avoid lumps. Cook the mixture for 3-4 minutes, until it thickens slightly.
  5. Remove the saucepan from heat and stir in the chopped dill and Dijon mustard. Season with salt and pepper to taste.
  6. Carefully pour the sauce over the salmon fillets, ensuring they are well coated.
  7. Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.
