Ingredients
  

  • 2 lbs gold potatoes cut into 1-inch cubes
  • 1 cup onion chopped
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon Kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons chili powder
  • 2 tablespoons fresh parsley chopped (for garnish, optional)

Method
 

  1. Preheat your oven to 425°F (220°C) to achieve that perfect crispy texture.
  2. Wash and peel the gold potatoes, then cut them into 1-inch cubes for even cooking.
  3. Chop 1 cup of onion into small pieces to enhance the flavor of your potatoes.
  4. In a large mixing bowl, combine the cubed potatoes, chopped onion, olive oil, melted butter, Kosher salt, black pepper, and chili powder. Toss until all the potatoes are well coated.
  5. Spread the potato mixture evenly onto a baking sheet in a single layer.
  6. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, flipping halfway through for even browning.
  7. Once golden and crispy, remove from the oven, garnish with fresh parsley if desired, and serve hot. Enjoy!
