Ingredients
  

For the Meatballs:
  • 1.5 pounds ground beef (80/20 is best)
  • 3 green onions (very thinly sliced)
  • 3 garlic cloves (minced)
  • 1 egg (lightly beaten)
  • 0.5 cup panko breadcrumbs
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp minced fresh ginger
  • 1 tbsp low sodium soy sauce
  • 1 tsp salt
  • 1 tbsp rice vinegar
  • 0.5 cup brown sugar
  • 1 tbsp low sodium soy sauce
  • 1 tbsp gochujang

Method
 

Instructions:
  1. Step 1: Preheat the Oven - Begin by preheating your oven to 400°F (200°C).
  2. Step 2: Mix the Ingredients - In a large mixing bowl, combine the ground beef, sliced green onions, minced garlic, beaten egg, panko breadcrumbs, gochujang, minced ginger, low sodium soy sauce, and salt. Mix until just combined.
  3. Step 3: Form the Meatballs - Scoop out about 2 tablespoons of the meat mixture and roll it into a ball. Place them on a baking sheet lined with parchment paper.
  4. Step 4: Bake - Bake the meatballs for 20-25 minutes or until cooked through and internal temperature reaches 160°F (70°C).
  5. Step 5: Prepare the Glaze - In a small saucepan, combine rice vinegar, brown sugar, low sodium soy sauce, and additional gochujang. Stir until heated through.
  6. Step 6: Glaze the Meatballs - Remove meatballs from the oven and drizzle the glaze over the top or toss to coat.
  7. Step 7: Serve - Serve warm, garnished with extra green onions if desired.

Notes

  • Let the meat mixture rest for about 10 minutes before forming meatballs.
  • Make ahead and store in the refrigerator for up to 24 hours.
  • Experiment with spices like sesame oil or chili flakes for extra flavor.
