  • 1.5 cups edamame cooked and shelled
  • 2 tbsp tahini paste a creamy sesame seed paste
  • 0.25 cup water plus more if needed
  • 1 tsp lemon zest
  • 1 whole lemon juice of one
  • 1 clove garlic crushed
  • Kosher salt to taste
  • pepper to taste
  • 2 tsp olive oil
  • black and white sesame seeds as a garnish, optional

Method
 

Instructions
  1. Start by cooking the edamame. If you’re using frozen edamame, simply boil them in salted water for about 5 minutes until tender. Drain and let them cool slightly before adding to the food processor.
  2. In a food processor, combine the cooked edamame, tahini paste, water, lemon zest, lemon juice, crushed garlic, and a pinch of kosher salt and pepper.
  3. Blend the mixture on high until it becomes a smooth paste. If it appears too thick, add additional water, one tablespoon at a time, until you reach your desired consistency.
  4. Taste your edamame hummus and adjust the seasoning with more salt, pepper, or lemon juice as needed. Remember, the flavors will develop as it sits.
  5. Transfer your hummus to a serving bowl, drizzle with olive oil, and sprinkle with black and white sesame seeds for an added decorative touch.

Notes

  • For a refreshing twist, add fresh herbs like mint or dill.
  • If too thick, gradually add more water or olive oil.
  • Freeze for up to 3 months in an airtight container for make-ahead convenience.
