Ingredients

  • 1 cup quark (or Greek yogurt)
  • 3 eggs
  • 1 cup almond flour (or ground almonds)
  • 2 tablespoons coconut flour
  • 3 tablespoons psyllium husks (or 1.5 tablespoons if using psyllium husk powder)
  • 3 tablespoons chia seeds
  • 1 tablespoon baking powder
  • 1 teaspoon salt (large pinch)
  • 2 tablespoons sunflower seeds (optional)

Method
 

Instructions:
  1. Step 1: Preheat Your Oven. Begin by preheating your oven to 350°F (175°C). This ensures that your bread cooks evenly.
  2. Step 2: Prepare Your Baking Pan. Grease a loaf pan with some oil or line it with parchment paper for easy removal later.
  3. Step 3: Mix Wet Ingredients. In a mixing bowl, combine 1 cup of quark or Greek yogurt with 3 eggs. Use a whisk or fork to beat the mixture until it is smooth and well-combined.
  4. Step 4: Add Dry Ingredients. To the same bowl, add 1 cup of almond flour, 2 tablespoons of coconut flour, 3 tablespoons of psyllium husks, and 1 tablespoon of baking powder. Don’t forget to sprinkle in 1 teaspoon of salt. Mix everything together until fully incorporated.
  5. Step 5: Incorporate Chia Seeds. Stir in 3 tablespoons of chia seeds, which will help to bind the bread and give it a delightful texture.
  6. Step 6: Adjust the Consistency. If the mixture seems too thick, you can add a little water to reach your desired consistency. It should be thick but pourable.
  7. Step 7: Add Optional Ingredients. If you're using sunflower seeds, fold them into the mixture now for added texture and flavor.
  8. Step 8: Pour into the Pan. Pour the batter into the prepared loaf pan, spreading it evenly.
  9. Step 9: Bake. Place the pan in the preheated oven and bake for about 40-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  10. Step 10: Cool and Slice. Once done, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
