In a large mixing bowl, combine the 3 cups of all-purpose flour, 1 teaspoon of baking powder, and 1 teaspoon of salt. Stir them together until they are well mixed.
Pour in the 1/3 cup of vegetable oil and the 1 cup of hot water. Use a fork or your hands to mix the ingredients until they come together to form a dough.
Transfer the dough onto a lightly floured surface. Knead the dough for about 5 minutes until it becomes smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.
Cover the kneaded dough with a kitchen towel and let it rest for at least 30 minutes.
After resting, divide the dough into 8 equal portions. Roll each portion into a ball and flatten slightly.
Using a rolling pin, roll each ball into a thin circle, about 8-10 inches in diameter.
Heat a skillet or griddle over medium-high heat. Place a tortilla on the hot skillet and cook for about 30 seconds, or until you see bubbles forming on the surface. Flip and cook for another 30 seconds.
