- Start by rinsing your cod under cold water. Pat it dry with paper towels. Slice the cod into strips, about 1 inch wide, and season with salt and pepper to taste.
- In three shallow bowls, set up your breading station. In the first bowl, add the flour. In the second bowl, whisk together the eggs and 1/2 teaspoon salt. In the third bowl, combine the Panko breadcrumbs, grated Parmesan, Old Bay seasoning, and garlic powder.
- Take each cod strip and first coat it in the flour, shaking off any excess. Next, dip it in the egg mixture, allowing any excess to drip off. Finally, roll it in the Panko mixture, pressing gently to ensure the breadcrumbs adhere well.
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Lightly spray the air fryer basket with olive oil spray. Place the fish sticks in a single layer in the basket, making sure they are not overcrowded. Lightly spray the tops with olive oil and air fry for 10-12 minutes, flipping halfway through.
- Once the fish sticks are perfectly crispy, remove them from the air fryer and serve hot with your choice of dipping sauce.
