For the Beef:
  • 1 pound flank steak Cut into 1/4" thin strips
  • 2-3 cups vegetable oil For frying; can use canola or peanut oil
  • 1 cup cornstarch For a crispy coating
  • 1 cup all-purpose flour For added texture in the batter
  • 1 teaspoon white pepper Adds a subtle heat
  • 1 cup water To mix with the dry ingredients
  • 1 large egg Binds the batter together
  • 1/2 cup low sodium soy sauce For seasoning
  • 1/2 cup water Additional liquid for the sauce
  • 2 tablespoons dark soy sauce Adds color and depth to the flavor
  • 2 tablespoons rice vinegar For a tangy kick
  • 1/2 cup brown sugar Balances the flavors with sweetness
  • 1 teaspoon chili flakes For a touch of heat
  • 1 tablespoon sesame oil Infuses a nutty aroma
  • 5 cloves garlic Minced for a robust flavor
  • 1 tablespoon fresh ginger Minced for that ginger punch
  • 1 tablespoon sesame seeds For garnish and added crunch
  • 2 stalks green onions Thinly sliced for a fresh finish

Equipment

  • Large skillet or wok
  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Slotted spoon
  • Cutting board and knife

Method

Cooking Instructions:
  1. Start by slicing the flank steak into 1/4" thin strips. This will ensure that the beef cooks quickly and remains tender. Place the beef in a mixing bowl and season with white pepper. Set aside for a moment.
  2. In another bowl, combine the cornstarch, all-purpose flour, and a pinch of salt. In a separate bowl, whisk together the water and egg until well blended. Gradually add the wet mixture to the dry ingredients, stirring until you reach a smooth batter.
  3. Dip each strip of beef into the batter, ensuring each piece is fully coated. This will give the beef a crispy exterior when fried.
  4. In a large skillet or wok, heat 2-3 cups of vegetable oil over medium-high heat. You want enough oil to submerge the beef strips for even frying.
  5. Once the oil is hot, carefully add the battered beef strips in batches. Fry until golden brown and crispy, about 2-4 minutes per batch. Use a slotted spoon to remove the beef and place it on a plate lined with paper towels to drain excess oil.
  6. In a separate bowl, mix together the low sodium soy sauce, dark soy sauce, rice vinegar, brown sugar, chili flakes, sesame oil, minced garlic, and fresh ginger. Add 1/2 cup of water to thin it out a bit.
  7. In the same skillet used for frying, pour in the sauce mixture and cook over medium heat for about 2-3 minutes until it thickens slightly. Add the fried beef strips to the skillet and stir well to coat them in the sauce. Cook for an additional minute to heat everything through.
  8. Transfer the Ginger Beef to a serving platter. Sprinkle sesame seeds and sliced green onions on top for a beautiful finish. Serve hot with steamed rice or noodles for a complete meal.

Notes

  • For gluten-free, substitute all-purpose flour with a gluten-free flour blend.
  • For a vegetarian option, replace flank steak with tofu or seitan.
  • To make it low-carb, serve over cauliflower rice instead of regular rice.
