Cooking Instructions:
  1. Step 1: Rinse the rice - Begin by rinsing the basmati rice under cold water until the water runs clear. This helps to remove excess starch and prevents the rice from becoming sticky.
  2. Step 2: Heat the oil - In a medium saucepan, heat the coconut oil over medium heat. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Step 3: Add ginger and turmeric - Next, stir in the grated ginger and turmeric. Cook for an additional minute, allowing the spices to release their aromatic flavors.
  4. Step 4: Combine rice and water - Add the rinsed rice to the saucepan, stirring to coat the grains with the fragrant oil and spices. Pour in 1.5 cups of water and add the sea salt.
  5. Step 5: Bring to a boil - Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the saucepan with a lid.
  6. Step 6: Simmer the rice - Allow the rice to simmer on low heat for about 15-20 minutes, or until all the water is absorbed and the rice is tender. Avoid lifting the lid during cooking to keep the steam in.
  7. Step 7: Fluff the rice - Once the rice is cooked, remove the saucepan from heat and let it sit, covered, for 5 minutes. Then, use a fork to fluff the rice gently.
  8. Step 8: Add finishing touches - Stir in the fresh lemon juice, dried cranberries, chopped cilantro, and toasted pine nuts. Mix well to combine all the ingredients and distribute the flavors evenly.
