The Method for Greek Skillet Chicken
- Start by patting the chicken breasts dry with paper towels. This step is crucial for achieving a nice sear. Season both sides of each chicken breast generously with salt, fresh ground black pepper, and half of the Greek seasoning.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts to the skillet. Sear for about 5-6 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced tomatoes (with their juices) and sprinkle the remaining Greek seasoning and garlic powder. Stir to combine, scraping up any brown bits from the bottom of the skillet for extra flavor. Allow the mixture to simmer for about 3-4 minutes.
- Return the seared chicken breasts to the skillet, nestling them into the tomato mixture. Allow everything to simmer together for another 2-3 minutes, letting the flavors meld.
- Sprinkle the crumbled feta cheese and sliced olives over the chicken in the skillet. Cover with a lid and let it cook for an additional 2-3 minutes, just until the feta is slightly warmed and the olives are fragrant.
